Canadian Super Chef Jen Peters and Matthew Clayton Bring us the 'Good Flour' for those seeking Gluten-Free options.
A protégé of Canada's Godfather of fine dining Chef Bruno Marti, Chef Jen Peters along with her husband Chef Hamid Salimian began looking for alternative ways in being able to bring delectable foods to those who, like Chef Jen live with a gluten intolerance.
Once Chef Jen took the allergy test and realized what she had suffered through most of her life, she began to search for alternatives in order to be able to create recipes that would please carb lovers everywhere without sacrificing breads, pastas and pastries taste or texture, nor settling for low-quality alternatives.
Both Chefs Jen and Hamid founded Nextjen Gluten-Free and in 2021, the husband and wife duo teamed up with Matthew Clayton, rebranding it as The Good Flour Company.
I was lucky enough to have a Zoom chat with Chef Jen and Matthew Clayton not only about celiac disease, my own lactose intolerance, as well as Basmati Rice being gluten intolerant friendly.
Along with the finer points of baking, creating a new all purpose flour and allowing not only professional chefs and bakers these alternatives, The Good Flour Company also ships their products across Canada and the United States.
