Today I am sitting down with Denise Favela to uncover the fascinating history of Mexican cookbook author, Josefina Velázquez de León. Denise is a content creator, recipe developer, and current student of Mexican cuisine and gastronomy. Inspired by the work of Josefina, she has been collecting, learning, and educating about her life, recipes, and beliefs for years.
Born in the late 1880s in Agua Calientes, Mexico, Josefina Velázquez de León had a desire to share Mexican cuisine and food culture in any way she could. She started a cooking school, opened her own publication press, and produced over 146 publications focused on vegetarian, Spanish, regional Mexican cuisine, and more.
A lot of Josefina’s work has been scattered and lost over the years, but it’s people like Denise who have been able to keep her work alive by studying her history and sharing about her significant impact.
